Summer Coleslaw
- 4 cups shredded cabbage
- 1 shallot, (finely diced)
- 1 carrot (shredded)
- 1 cup mayonnaise
- 3 tablespoons vinegar
- 1/3 cup sugar
In a large bowl add cabbage, carrots and shallots and set aside.
In a small bowl, whisk together the remaining ingredients, pour over the coleslaw mixture and toss until everything is mixed. Chill for two hours.
