1 cup dehydrated strawberries, plus two tablespoons pulverized
1 teaspoon salt
1 teaspoon vinegar
2 tablespoons raw sugar
Whisk flour, salt, baking powder together then cut in butter until mixture is pea sized. Then Gently stir in strawberries.
Whisk together heavy cream, 1 egg, vanilla and vinegar
Combine dry and wet ingredients until incorporated. Kneed a few times until smooth.
Place on a lightly floured surface and press into a round disk about 1 inch thick. Cut into 8 equal (ish) triangles. Place on a parchment covered baking sheet
Take the 1 egg and beat well, brush the scones with the egg wash. mix the raw sugar and the pulverized dehydrated strawberries together and sprinkle over the scones.
Bake in a preheated oven at 400 degrees for 17 to 20 minutes until tops are golden and crisp. Let cool for 15 minutes and then serve with your favorite clotted cream and jam!
