Place 2 cups light brown sugar in a dish stir in the cinnamon and chipotle. Gently press the slices of bacon into the sugar until coated. Lay on a sheet pan covered with Parchment.
Over top of the sugar coated bacon add another layer of parchment and place another baking sheet on top. The baking sheet will keep the bacon flat.
Place the tray in the center of the oven and bake for 20 minutes. Check the bacon by lifting the top tray and parchment. Turn the pan and continue to cook. Bake if for 10 to 15 minutes longer. Check it again. Don’t over cook the bacon as it will continue to cook and crisp once it is taken out of the oven.
Let cool for 5 minutes and remove from the pan onto a the other piece of parchment paper. Cool completely and then place on a serving dish. Don’t stack on each other until cool as they will not be able to be separated after cooled.
