2 8-inch tortillas
1/2 cup Swiss cheese, shredded
1/4 cup corned beef, chopped
1/4 cup coleslaw
5 strips bacon, cooked and crumbled
1 tablespoons chives, finely chopped
2 Tablespoons remoulade or thousand island dressing
1) Butter one side of the tortilla.
2) Place 1/8 cup Swiss cheese, 1/8 cup corned beef, 1/2 the bacon and 1 and 1/2 teaspoons chives on
half of the tortilla. Then sprinkle 1/8 cup of cheese on top of the mixture and fold in half. Copy
step on the other tortilla.
3) Put quesadilla in pan on medium low and cook for approximately 5 minutes until golden and then flip
and repeat on the other side.
4) When done open the quesadilla and put an 1/8 cup coleslaw and 1 tablespoon of remoulade or thousand island dressing in the quesadilla.
