Orange Glazed Baked Ham

Orange Glazed Baked Ham

Orange Glazed Baked Ham

Cooking time: 2 and 1/2 hours or 15 minutes per pound
Prep Time: 15 minutes 
Servings: 15 

1 10-pound bone-in fully cooked smoked ham (butt or shank half)
10 oz jar bittersweet orange marmalade
1 cup light brown sugar
1/2 cup stone ground mustard
8 garlic cloves (finely minced)
20-25 whole cloves
2 tablespoons rosemary (finely minced)
1 Orange, zest and juice

1) Preheat oven to 325 Degrees. 

2) Cut off the skin leaving the fat. put on a rack in a roasting pan face down and pour a half cup of water in the bottom of the pan.

3) Using a sharp knife, score the ham with cuts across the skin, about 2-inches apart and 1/2-inch 
deep. Cut diagonally down the slashes to form a diamond pattern; 

4) Insert a clove in the intersection of the cross of each diamond on the surface. Put in the oven on the lower third so the ham won't be close to the top. Cook for 1 hour and 45 minutes. The take ham out
of the oven and turn oven up to 425 degrees.

5) Mix orange marmalade, brown sugar, stone ground mustard, garlic, orange juice and zest, and 
rosemary together. Put 1/2 the glaze on the ham and put back in the oven on it's side with the flat part exposed and the fattiest part of the ham on top.

6) Every 10 minutes baste with more glaze for the next 45 minutes or until brown and lovely. Remove 
from the oven and let rest for 20 minutes. Then slice ham and pour the juice from the bottom of the 
pan over the ham. Try to skim all the fat from the juice.
