Active Prep: 20 minutes Inactive: 8 hours
Servings: 6
2 cups heavy whipping cream
1 teaspoon cornstarch
1 14 ounce can sweetened condensed milk
4 tablespoons Berry Blue Jell-O
3 tablespoons Strawberry Jell-O
2 tablespoons Lemon Jell-O
1/8 teaspoon almond extract
Blue, red and yellow food dye. (liquid or paste but don’t use gel, it doesn’t dissolve well)
Whip the cream and corn starch with a mixer on medium-high speed until firm peaks form, about 2 minutes. Fold about 1 cup of the whipped cream into the condensed milk mixture with a rubber spatula until combined, then fold the lightened mixture into the whipped cream until well blended.
Separate the cream into 3 parts, 1 cup, 2/3 cup, 1/3 cup. In the 1 of mixture fold in berry blue Jell-O, almond extract and blue food dye until the desired color. In the 2/3 cup of mixture add strawberry Jell-O and red food dye until the desired color. In the 1/3 cup of mixture fold lemon Jell-O and yellow food dye until the desired color
Spoon large dollops of the three mixtures in a chilled 9-by-5 loaf pan. Do this at random spacing. Take a knife and swirl the colors. Freeze covered for 6 hours.
