Irish Nachos

Prep Time: 5 minutes Cook Time: 15 minutes
Serves: 4 

3 Idaho potatoes
1 cup Swiss cheese
1/2 cup corned beef (cubed or shredded)
5 strips bacon
4 green onions (sliced)
1/2 cup coleslaw
Vegetable Oil
Salt

1) Using a mandolin or a sharp knife, slice the potatoes really thin (they should be see
through) rinse thoroughly and let set in water.
2) In a pan cook the bacon until crispy and then cut into small pieces.

3) Add oil to a large heavy duty pot to come halfway up the sides of the pot and heat it to 
350 degrees.

4) Working in batches, dry the potatoes completely on paper towels (make sure every potato is dry or they won't crisp).
5) Fry the chips until golden brown, making sure to stir so they cook evenly. Don't overcrowd the pan, do them in small batches

6) Drain on a paper towel lined plate and immediately sprinkle with salt.
7) Place the chips on an oven safe pan or plate, sprinkle cheese, corned beef and bacon on 
chips and place under the broiler until the cheese has completely melted.
8)Place on serving plate and sprinkle more bacon and green onions on top, then top with 
coleslaw*. Serve with remoulade sauce* or 1000 Island dressing.
