Gnocchi Shrimp Salad

1lb Shrimp (18-22 count) 1lb Gnocchi 1 1/4 C Mayonnaise 2 Orange (Zest and Juice) 1/4 Dill 1 Tbls Champagne Vinegar 2 Tbls Capers 2 Tbls Shallots (finely Diced) 2 Stalks of celery (finely diced) 2 tsp Salt 1 tsp Pepper
- Put gnocchi in salted boiling water. Gnocchi will be done when they float to the top. Drain and lightly coat with olive oil. Lay on a sheet pan in a single layer to cool about 15 minutes.
- Peel and Devein Shrimp
- Place on roasting sheet with olive oil, salt and pepper in a single layer. Bake in a preheated 400 degrees oven. Bake until they form “C’s”, about 7 minutes. Cool about 10 to 15 minutes
- Chop shrimp into chunks, You will get about 3 pieces for every shrimp
- in a separate bowl mix mayonnaise, dill, champagne vinegar, orange juice, zest, salt and pepper
- Pour onto gnocchi, adding capers, shallots and celery
