German Park Potato Salad

  • 3 pounds California Long potatoes or Yukon Gold
  • 1 cup yellow onions, shaved
  • 3/4 cups beef broth
  • 1/4 apple cider vinegar
  • 3 tablespoons canola oil
  • 3 tablespoons sugar
  • 1 to 2 teaspoons kosher salt
  • 1/4 to 1/2 teaspoon white pepper
  1. Cover potatoes with cold water and boil until fork tender
  2. Immediately peel the potatoes and slice them in about 1/2 inch thick rounds add in the onions. While still warm add beef broth, not stock, mix together. As the liquid sits the potatoes will absorb the excess liquid.
  3. Mix vinegar, sugar, salt and pepper stir until sugar dissolved. Add the Canola oil and stir together. Pour over the potatoes and mix together. Let sit for for about a half hour. You can serve this warm or cold. I prefer warm. If I have it in the fridge I will warm it up before serving.
