3 pounds carrots (peeled and cut in same size sticks)
3/4 cup ham juice* www.justinthekitchen.com/honey-baked-ham-copycat/
1 orange, juiced and zested
6 sprigs fresh thyme or 1 teaspoon dried thyme. +4 sprigs to sprinkle on top.
1 teaspoon salt
1/2 teaspoon pepper
Mix all in ingredients so carrots get all coated. Cook at 350 for 20 to 30 minutes, depending on how big your carrots are. Half way through cooking turn your pan around and also flip your carrots to the other side.
When they are done and plated add the fresh thyme leaves (if you don’t have fresh thyme leave it off) Sprinkle with flaked sea salt.
* If you do not have ham juice just take 3 tablespoons melted butter, 2 tablespoons olive oil and 3 tablespoons of honey.
