Blueberry Balsamic Pork Chops

4 Bone-in Thick Cut Pork Chops
1 Cup Chicken Stock
1 Cup Fresh Blueberries
2 Minced Garlic Cloves
1 1/2 Teaspoons Thyme
1/4 Cup Balsamic
3 Tablespoons of Honey
4 Tablespoons of Butter
2 Tablespoons of Canola Oil
- Salt and Pepper pork chops and sear in a hot pan with canola oil and 2 tablespoons butter, brown both sides.
- Remove pork chops from pan and pour in the chicken broth and deglaze the pan.
- Add the garlic, thyme, balsamic vinegar, honey and salt and pepper to taste. Bring to a boil and reduce to simmer. Add blueberries and let simmer until it has reduced by half.
- Add the pork chops back in and let cook for about 5 minutes until the pork chops are 135 degrees.
- Turn off heat and remove pork chops, wait until the sauce stops boiling and add 2 tablespoons of butter and stir until melted.
- Pour 1/3 of the sauce over top of the pork chops, keeping the remaining sauce for guests to use as needed. Let rest for 10 minutes and serve
