Best Southern Fried Green Tomatoes

- 4 green tomatoes
- 2 eggs
- 1 1/2 buttermilk
- 2 cups all purpose flour
- 12 oz Panko bread crumbs
- 1 tablespoon hot sauce
- Canola oil
- salt and pepper
Sriracha Ketchup
- 3/4 cup ketchup
- juice of half a lemon
- 1 tablespoon Worcestershire
- 1 teaspoon to 1 tablespoon sriracha
Remoulade
- 3/4 cup mayonnaise
- 1/3 ketchup
- juice half a lemon
- 1 tablespoons Worcestershire
- 1 teaspoon chipotle chili powder
- 1/2 teaspoon Hungarian paprika
- 1 teaspoon seasoning salt
- Heat oil in a pan to 350 degrees. Have enough oil in the pan that you use to reach about half-way up the tomato.
- Run tomato slices under water and salt and pepper.
- Set up 3 dishes to make a breading station: To the first dish, add the flour, salt and black pepper and stir to combine. In the second dish, beat the buttermilk with the eggs and hot sauce. In the third dish, add the panko and salt and pepper.
- Dredge tomatoes through the flour, then the egg mixture, and then through the bread crumbs. Make sure to get the sides of the tomato at all stations, you don’t want a nekkid tomato.
- Working in batches, carefully place the breaded tomatoes into the hot oil, don’t crowd the pan. Fry until golden brown and crispy, about 5 minutes per side. Transfer to the cooling rack or a paper towel and sprinkle each slice generously with more salt.
