Reuben Egg Rolls
Prep Time: 10 Minutes Cook Time: 5 minutes Servings: 6 2 Cups Corned Beef 1 Cup Sauerkraut 6 Slices Swiss Cheese 12 Egg Roll Wrappers Vegetable Oil 3 Tablespoons water Remoulade Sauce (recipe to follow)
1) Fill a heavy duty pot half way up with some vegetable oil and bring it to 340 degrees
2) Lay an egg roll wrapper diagonally, place a half a piece of Swiss chees slightly off center towards you, leaving about an inch and a half from the point in. Top the cheese with some of the corned beef and follow with 3 tablespoons sauerkraut, then brush some water all around the edges with your fingertip or a brush. Fold the sides in over the mixture and take the end closest to you and roll away from you, Tuck the end in and seal it like a burrito. Repeat with the rest.
2) Fry a few at a time in the hot oil or until deeply golden brown, do not overcrowd the pot. Drain on a paper towel lined plate and serve with some the remoulade sauce below or 1000 island dressing.
Remoulade Sauce 1 Cup Mayonnaise 1/2 Cup Ketchup 1/2 Lemon, zest and Lemon 1 Teaspoon Garlic Powder 1 Teaspoon Onion Powder 1 Teaspoon Seasoning Salt 1 Tablespoon Chipotle Chili Powder 1 1/2 Teaspoon Smoked Paprika 3 Tablespoons Small Capers (chopped) 1 Tablespoon Sriracha Sauce, or to taste
